Have you ever looked at the ingredient list on your bread from the grocery store? Does it look similar to this?
First of all, why do I need caramel coloring in wheat bread…shouldn’t it already be brown? And also, I am pretty sure I can make bread without soy lecithin. Have you ever wondered what soy lecithin is and why it is in so many of our foods? Basically, it is an emulsifier that helps maintain the freshness of food. (Emulsifiers are also why the oil and water in mayonnaise do not separate.) Soy Lecithin is highly processed and completely not needed to make bread. This holds true for many of the ingredients in the bread above. They are however needed to keep the bread nice and appealing to you while it is packaged and shipped to your grocery store and while it waits on the shelf for you to buy it. There are many people who believe food processing is a major contributor to modern diseases, such as heart disease, diabetes, and many cancers. This is an issue. However, what bugs ME most about food processing is that it does not help the TASTE of anything. Honestly which tastes better: store bought or homemade bread? Okay, that is an easy answer. Store bought nowhere compares to the taste of fresh homemade bread. You can get close by buying it from an expensive fancy bakery. If you look at the ingredients in THAT bread it is doubtful you will find all the nasty sounding ingredients in the above picture. Today’s commercial bread is a far cry from the wholesome bread mentioned in the Lord’s Prayer. Give us, Lord, our daily calcium propionate? Hmmm…not so much. This had been irking me lately so I decided to find a simple recipe for homemade whole wheat bread. My goal was to find a recipe that required minimal and natural ingredients and only ONE type of flour: good ol’ 100% whole wheat. Thankfully, I found just what I was looking for and am excited to share my find with all of you!

Honey 100% Whole Wheat Bread from 100 Days Real Food
Ingredients (Seriously, this is all you need for the best whole wheat bread ever!)
- 4 ¼ cups whole-wheat flour
- ½ teaspoon salt
- 1 ½ cups warm water (not too hot or it will kill the yeast)
- ¼ cup honey
- 2 tablespoons olive oil (or melted butter)
- 1 packet or 2 ¼ teaspoons yeast
I used my bread machine on the whole wheat setting for a 2lb loaf. Depending on your bread machine you will need to either add the dry or wet ingredients first. If you do not have a bread machine, here is a similar recipe for making bread by hand.
