This lovely March we’re going to cover ALL THE HEALTHY THINGS! Why? Because, it is the end of winter, we are going to chase the Winter Blah’s away as we near spring with health food that you will actually want to eat, exercise you can really do any time, any where, and we’ll up load all our best ideas for boosting the spirit and mind right along with the physical booty kickin’ mojo.
Starting with everyone’s favorite - sitting on your butt and eating food!
Meet the Sweet Potato. It is so much more than the orange stuff under the marshmallows at Thanksgiving dinner. Just for starters just 1 of these bad boys provides an entire day’s worth of Vitamin A, a mega dose of Fiber, Vitamins C, E, and B6! All that equals healthy arteries, uv protection, immunity boosters, and silky vitamin boost for healthy skin and hair. They also are packed with a little sucker called Manganese. Never heard of it? Don’t worry, it’s just a mineral that helps you metabolize carbohydrates. Yep, not only is the Sweet Potato low carb friendly, but provides your system with help in burning off all that other crap you eat.
Sweet Potato Pasta Sauce
1 Large Sweet Potato (two cups, mashed for 4-6 servings)
3/4 Cup Milk
1 T Butter
2 Cloves minced or grated garlic
1/2 T Basil
Salt and Pepper to taste
1/2 Cup Parmesan Cheese
Cook the sweet potato in the microwave in the skin. Once it is soft you can cut it in half and scoop out the inside. Mash it with the milk in a bowl.
Sauté the garlic and basil in the butter until the garlic is just starting to brown.
then add the potato mix, salt and pepper, and parmesan. If it is too thick, just add more milk, or a little bit of water. (A spoonful of hot water from your boiling pasta works well)
Serve over pasta! Sorry, no snazzy plated pic’. We were too busy eating it.
*This is a versatile sauce, half the garlic and add pine nuts and sage to serve over chicken, or use lemon pepper and cilantro to serve with shrimp!
